This organic family farm prioritizes animal welfare, biodiversity and also shares our focus on quality and customer experience. The level of care and time that goes into rearing this organic product, is why we take our time with this range and only use the oldest curing method that is, dry curing!
Dry curing of Hams is an older more traditional curing method. It’s a learnt skill that takes plenty of practice to perfect. Lucky for us we have a team of butchers who know our secret to the perfect dry cured Ham and have been hand rubbing our Hams for many years with our special recipe. This way of curing doesn’t involve any adding of water and this is why its a longer process. The cure penetrates the meat from the outside, this typically takes 7-10 days and is monitored by our technical team to ensure we are getting an even cure on all our Hams. The Hams are then netted and tied by hand, slowly steam cooked over a period of 9-10 hours to ensure the most succulent distinctive flavour.
