Wiltshire Cured Ham

Out Of Stock

Wiltshire Ham infers a specific curing method that originates from the 18th century. It was developed by the Harris family in Calne, Wiltshire.

Here at Houghton Hams we produce an authentic Wiltshire Ham and have been accredited to do so under the BMPA’s charter standard.

Our Wiltshire Ham is produced through a secret injection brine with no water retainers, the product is then immersed in a live brine where only salt tolerant organisms survive and then our technical team go to work to monitor and control this conversion.

These organisms help the chemical conversion of nitrate to nitrite over a period of 3 -10 days. This extended maturation period also helps to develop the distinctive colour and flavour profile of our Wiltshire Ham.

During this period the Hams are turned by Hand to ensure a consistent curing uptake.

The product is then slowly cooked for a duration of approx. 9-10 hrs to complete this crafted production process, culminating in a true depth of flavour.

Authentic Wiltshire Ham

Slowly Does It…..

All good things come to those who wait! The flavour of our Wiltshire ham takes up to 10 days to mature but, it’s worth that wait. This process was first developed in the 18th century by the Harris family. Houghton Hams are accredited to produce Wiltshire Ham under the BMPA’s charter standard, including both a Plain and Honey Roast ham in the range alongside a 3kg joint for those special occasions.

What Our Customers Say

Bought this Ham for the 1st time last week and it is absolutely beautiful!! Excellent value for money and have just added it to my further orders for the next few weeks.

I buy this every week - lovely, old fashioned stylee salty, thick sliced ham!

This is the best pre packed ham I have ever come across. Thickly sliced and tasty. So much better than the Ocado alternatives. Because the slices are so thick it's better value too.

I am a big ham eater -- my usual breakfast is a slice of ham with a slice of cheese. After one pack, this has been promoted to my favourite ham so far. Very tasty, and moist, though not slimey. Fingers crossed for the second pack, though I understand these fresh foods cannot be 100% standardised.

The most delicious ham I've tasted. It's as if it's just been sliced off the bone, slightly thicker than regular ham but not dry. Very tender and tasty.
