When Nigel and Jo started the business back in 1983, this was the recipe given to him and is unique to us.
This Cure was moved to production under license shortly afterwards and bares the family name Wagstaff Complete Cure. Our wet cured Hams are now produced through our integrated curing line, this is a real step change from those early years. No longer are we manually stirring our brines but instead they are mixed in temperature controlled chambers where everything from ph, specific gravity and nitrate/nitrite levels are monitored. Our recipe is then injected into the meat at precise percentages to create our finished Wagstaff Ham range.
This is our jewel in the crown and of which we’re extremely protective. This recipe gives us our distinctive, deep, yet sweet but subtle flavour. The recipe is produced into both Gammon Ham and Cooked Ham versions.
