Excuse the photograph as this meal was not intended for the site, however I had a last minute idea to share this with you before I tucked in! Super easy and tasted delicious…
Serves 2
25g parmesan, grated, plus extra to serve (optional)
150g spaghetti or whichever pasta you chose ( I used fresh tagliatelle )
a small bowl of peas ( or however many you fancy adding to the dish )
1 garlic clove, crushed
1 pack of (3 slice) Houghton Hams Northamptonshire cured ham cut into small strips
a small knob of butter
Firstly cook you spaghetti/pasta following pack instructions meanwhile mix the eggs and parmesan the create a thick sauce, season with salt and pepper.
Throw the garlic into the pan with the butter, for a couple of minutes, once it has absorbed the flavour remove the garlic and add the peas followed by the ham. Heat through for a couple more minutes.
Remove the pan from the heat and drain your pasta leaving a little water for the sauce at the end. Mix your egg and parmesan mixture into the pasta followed by your peas and ham, making sure the sauce is covered evenly.
Add a little of the remaining used water to the sauce to reduce the thickness, and add further parmesan if desired…
